Coconut oil is extracted from the kernel, or meat, of mature coconuts harvested from the coconut palm (Cocos nucifera).

Thanks to its high saturated fat content it oxidises slowly and resists rancidity — it keeps for up to six months at 24 °C (75 °F) without spoiling.

That natural stability makes it one of the most versatile raw materials there is, with applications from the kitchen to cosmetics.
